Overview

At Houston Methodist, the Baker's Assistant position is responsible for high-quality bake shop preparation and sanitation, as well as assisting the Baker to ensure Houston Methodist standards are upheld. The tasks include, but are not limited to operating commercial bakery equipment, having basic baking skills such as scaling, mixing, proofing, baking, cooking, simple decorating and use of knives, as well as other preparation tasks such as panning, etc. This position must have a working knowledge of preparing breads, rolls, biscuits, cakes, creams, custards, fillings, muffins and pies from scratch or mixes. Demonstrates adherence to policies, procedures, departmental Code of Conduct and local and federal regulatory standards (e.g., Texas Department of Health, Houston Department of Health and Human Services, HIPAA, etc.)

Responsibilities

PEOPLE ESSENTIAL FUNCTIONS

SERVICE ESSENTIAL FUNCTIONS
  • Performs a variety of simple bake shop tasks assisting the baker, including ordering, filling out daily production logs, inventory and operating commercial bakery equipment such as, mixer, oven, proof box, steam jacketed kettle, blast chiller and stove.
  • Assists the Baker with new food items from the creation to making it a menu item. Reviews menus the day before to ensure supplies are in house.
  • Works in conjunction with the Baker(s) ensuring the food is prepared on time, high quality and transferred efficiently. Transports food prepared by Food Production to the Patient tray line. Serves customers in a timely and courteous manner.
  • Assists Baker in monitoring and recording temperatures of food and refrigeration.
  • Greases pans, portion and bake muffins, dinner rolls, cornbread and cookies and icing cakes and sweet rolls. Assembles baked goods according to bake order sheets and special orders for patient tray line for Houston Methodist locations.
  • Maintains high-level customer service retail practices in coordination department policies and procedures.

QUALITY/SAFETY ESSENTIAL FUNCTIONS
  • Responsible for sanitation and washing pots, pans and utensils in accordance with established cleaning and sanitation procedures. Sweeps, mops and cleans floors, walls and work areas, cleans commercial kitchen equipment and does other assigned cleaning tasks in the Central Kitchen.
  • Transports trash, garbage, cardboard and supplies to and from the Central Kitchen and to assigned areas.
  • Stores, labels, dates, inventories and rotates prepared food.
  • Follows all department safety rules while on the job. Reports accidents promptly and corrects minor safety hazards. Communicates with peers and management regarding any hazards identified in the workplace.

FINANCE ESSENTIAL FUNCTIONS
  • Uses resources efficiently; does not waste supplies. Self-motivated to independently manage time effectively and prioritizes department daily tasks, minimizing incidental overtime.

GROWTH/INNOVATION ESSENTIAL FUNCTIONS
  • Takes initiative and shows self-reliance in all aspects of food production, including organization and timeliness.
  • Completes and updates the My Development Plan (MDP) on an ongoing basis.

Qualifications

EDUCATION
  • High School diploma or equivalent education (examples include: GED, verification of homeschool equivalency, partial or full completion of post-secondary education, etc.) preferred

WORK EXPERIENCE
  • One year experience as a baker's assistant in a high volume bakery organization preferred

License/Certification

LICENSES AND CERTIFICATIONS - REQUIRED
  • Food Handlers Permit -- Accredited food handler training course approved by the Texas Department of State Health Services (TXDSHS) or by the American National Standards Institute (ANSI)

  • Demonstrates the skills and competencies necessary to safely perform the assigned job, determined through ongoing skills, competency assessments, and performance evaluations
  • Sufficient proficiency in speaking, reading, and writing the English language necessary to perform the essential functions of this job, especially with regard to activities impacting patient or employee safety or security

  • Must know how to operate commercial bakery equipment such as divider, rounder, mixer, oven, pie press, proof box, sheeter, steam jacketed kettle and stove
  • Must have basic baking skills such as scaling, mixing, proofing, baking, cooking, decorating and use of knives
  • Must know how to prepare items such as breads, rolls, biscuits, cakes, cookies, creams, custards, fillings, muffins and pies from scratch or mixes
  • Assist supervisor in overall operation of bakery including requisitioning, inventory and controlling ingredients and supplies. Maintain high quality standards of products and service
